FishTell, a project from TITAN open call beneficiary Tellspec, is a cutting-edge solution that addresses the growing demand for transparency and quality assurance in the seafood industry. This innovative platform is designed to assess fish freshness in real time using Near-Infrared (NIR) spectroscopy, AI, and blockchain technology. Leveraging the power of these technologies, the platform delivers real-time freshness scores and enhances traceability across the supply chain.
In the beginning of June, the Tellspec team traveled to the Algarve region of Portugal to collect fresh fish straight from the ocean. Within minutes of the catch, they performed the first incision and scanned a removed piece from each fish. This allowed the team to obtain a spectral analysis of each fish less than two hours after it was caught.

The fish were transported to the Tellspec lab in Braga, Northern Portugal. There, the team will scan small, consistent sections of the fish over the next ten days as they age. This process will provide a spectral reference detailing the changes in the chemistry of the fish over the ten days.
Ultimately, this newly collected spectral data will be combined with the existing corrected spectral information to build AI models. These models will be designed to predict the K-value of the fish, effectively indicating its freshness.
